With more people switching to rice over gluten containing grains, rice allergies are now skyrocketing, so I'd also be interested in decent alternatives to rice (keeping in mind that 1. nearly all grains need to be soaked to prevent further damage to the gut and 2. too many bean flours can also cause permanent digestive issues). I was wondering if you ever got clarity on this project. I haven't done anything quite like an umbrella, but I've done a few sofas and chairs. I always use the old fabric as my pattern for the new covering. In your case, I'd suggest taking lots of pictures or even video as you're undoing the old umbrella. I would think it'd be a pretty straightforward job, so long as you document what you need to do and where Wink Good luck!
