wow thanks, that helps a lot. i am informed and inspired! i'll let you know how it turns out. i'm going to try the coconut oil, too. the potluck i'm making it for has pretty strict vegans.. though i've heard that there is such thing as vegetbale ghee? probably not as tasty as the real thing or coconut oil neither, so i think i'll opt for the oil.
thanks again

my newest favourite is the chai cupcakes from the Vegan with a Vengeance cookbook (i think). they were so good!!!

Chai Cupcakes/ Cake

1 cup soy or rice milk
4 black tea bags
cup canola oil
cup soyogurt
cup sugar
1 tsp vanilla
1 1/3 cup flour
tsp baking soda
tsp baking powder
tsp salt
2 tsp cinnamon
1 tsp cardamom
tsp ginger
tsp cloves
pinch of black pepper

Icing glaze:
2 Tbsp margarine
1 cup powdered sugar
2 Tbsp rice milk
1/8 tsp cardamom
drop of vanilla extract

heat the soymilk with the tea bags. remove from heat and let sit 10 minutes. mix together the oil, yogurt, sugar, vanilla, tea mixture. sift in the flour baking powder, baking soda and spices into the wet. bake for 20-22 minutes at 375 F
8  COOKING / Vegetarian / Vegan / Chickpea flour, anyone? on: May 09, 2007 08:30:13 PM
wondering if anyone has ever made anything with chickpea flour before... i once had this delicious little melty cubes apparently made of chickpea flour bought from the middle eastern grocery store here.
i found a couple of dessert chickpea flour recipes, but they call for ghee. is there anything i can replace it with?
9  COOKING / Vegetarian / Vegan / Re: Wedding Cake! on: May 07, 2007 06:44:23 PM
the frosting should definitely be vegan. it is easy to make vegan frosting, and besides most storebought frosting ends up being vegan by default of it being cheaper to make, the downside being losts of weird unhealthy stuff.
but homemade frosting will usually just be icing sugar, margarine, etc

i second the recommendation for vegan cupcakes take over the world. i don't have the book myself, but every recipe i've tried in cake form from friends who have it is delicious! i made the chai recipe, the coconut one and the green tea one.

yum x a million
