Has anyone had any luck freezing potatoes?

I made beef stew tonight in the crock pot, and there is a lot, I like to freeze stews and soups but my friend told me never to freeze potatoes because they defrost gross. I am finding mixed reviews online, hoping to hear from someone with potato freezing experience?

In other news I did make a few batches of shredded bbq chicken breast for the freezer. Thanks so much for starting this forum, it really got me on the ball! I don't really find myself getting organized enough to spend a whole day cooking for the month, or for several months, but I have been enjoying cooking other meals while I cook that day's meals to freeze for days when I'm not going to have time to cook(or just don't feel like it!! 25  Re: Bulk Cooking Club in Recipes and Cooking Tips by PixieVal on: September 10, 2012 08:46:16 PM
This is what I made tonight:

Taco meat. 1 pound, only my husband and daughter eat it, so I split it into 3 servings

I actually had 2 pounds to make taco meat with but hubby requested meatloaf. I lost my mini pans in the move that would have allowed me to make 3 loafs, so I made it up in cupcake tin. 350 for 25 minutes

I also made 3 chicken pot pies, and created them a recipe post here

26  Chicken Pot Pie Recipe in Recipes and Cooking Tips by PixieVal on: September 10, 2012 08:41:27 PM
So last week I quick threw together a random casserole for my family, and my husband loved it and said it would make awesome chicken pot pie filling, so I did! And it was so yum!

now.. MareMare started a Bulk Cooking Club the other day which I jumped on and joined, and thought this recipe would be perfect for it! So here is the recipe, and 3 meals for you!

*** disclaimer***
This is best for leftovers, cause the night it is cooked the sauce tends to slide, but when you cut it onto your plate the next day, it really seems to "pie up"

Chicken Pot Pie x2 (or 3 depending on your pie pan size, mine were small so I got 3)
2 or 3 pie pans
4 half boneless skinless chicken breasts boiled then shredded
2 cans cream of mushroom
1 2lb bag of frozen mixed veggies(I used VIP) cooked
Pilsbury refridgerated pie crust, 2 or 1 rolls(I used 2 the first time for top and bottom, after that started just using 1 for top.. saves $$ and calories)
pepper to taste
a couple shakes of minced onion
2 cups vegetable or chicken broth

Preheat oven to 350 degrees

mix all ingredients except pie crust in a large bowl.

If using crust on bottom place in pie pans according to directions on box

Scoop mix into all pans evenly.

Cover with top crust according to directions.

Cook 1 pie:

Put tinfoil over edges of crust for first 15 minutes

Take off tinfoil and place back into oven for another 25 minutes

Freeze other 2 pies by wrapping in plastic wrap and then placing in freezer bag.

Defrost for 1 day before cooking.

27  Crochet Hook Case in CHALLENGE 78 ENTRIES by PixieVal on: September 09, 2012 09:02:51 PM
So here is the thing... I was totally going to make my daughter something for this challenge since it is her first year of school. But turns out.. preschoolers really don't need anything for school! So I made myself a crochet hook case!

I received a nice one a few years ago in a swap, but my mom has that now. Then my hubby  bought me for Christmas one of the nice zip up pleather ones with all the individual slots for your hooks... When my daughter was 2, she ripped all the slots. Since then, my hooks have been traveling in a bag all willy nilly, getting lost constantly. I figured it was time to get them their own case!

I used this pattern, and then I sewed a back onto it with some fabric that has been kicking it in my stash for about 4 years!!

This is the first time I have attached fabric to crochet, and I think I still have a bit to learn about that!

28  A Scrapghan, an Acorn, A Beach Bag, A slouch Hat, and a poncho in Crochet: Completed Projects by PixieVal on: September 07, 2012 02:48:00 PM
So I thought I would try out the new image uploader today and upload some of the crocheted items I've made recently! I never think to upload any of them, and I don't know why, so here they are!
First here is a scrapghan I made about a year ago, and never uploaded.. this was a fun evening project just using up those last bits of yarn that lived in my stash for a million years..  Cheesy Cheesy

A Beach bag I made when we first moved to California in April, I can actually fit snacks, water, 3 beach towels, beach buckets/shovels, my purse, a jacket, a change of clothes for my daughter, and a few other things in here, and the sand shakes out very easy!

This poncho I actually made sometime last year, and just never got around to uploading it, it is so comfy, and I am always in it in my house, and just recently started wearing it outside the house!

I made this acorn the other weekend for my writer's club, something for us to keep our topics in for us to shake about. I tried following a pattern for this one, but lost patience with it because it was waaaayyy too wobbly! I am going to make another acorn to my own pattern and write that down one of these days!

And finally I made this hat the other night, love it! And I love the yarn!

Thank you for looking! I will try not to make it so long between project uploads anymore!
