1  COOKING / Recipes and Cooking Tips / Re: Your Weekly Menu on: August 05, 2006 11:35:17 PM
My family loves spicy and mexican style foods. We always have taco seasoning, refried beans and salsa on hand.I make an easy mexican style dish that is just groundbeef(seasoned with taco seasoning),rice, black beans, corn and salsa. It is really yummy.I also make chicken enchilada's alot. And I love Jumbalaya. It's one of my favs.Another thing I make although it sounds kinda weird is hamburger patties(without buns or condiments)mashed potatoes(I love the roasted garlic kind) and corn/green beans.Just season the hamburger patties with grill seasoning. If that seems too weird to you then you can do cube steak the same way.Cube steak is a great cheap meat that's an alternative to chicken and hamburger.

Here's something I found over on allrecipes.  It sounds kind of odd, but it's really good.

Apricot Chicken
1 cup apricot preserves
1 cup Russian salad dressing ( or substitutue Catalina or French)
1 pkg. Lipton Onion Soup mix
4 - 6 boneless chicken breasts ( or other pieces if you prefer)
Mix preserves, dressing and soup mix together.  Lay chicken out in a pan and pour sauce over.  Cover and bake at 350 for 45 - 50 min. until chicken is done,  depending on chicken pieces used.  I think boneless cooks quicker.  Serve with rice.

I know that Russian or French dressing is tomato based, but my daughter hates raw tomatoes and this is one of her favorite dishes.  The sauce is really good over the rice.

omg I love this it's so good!
