This style of hat (sorry, not a beanie or stocking style) looks complicated, but it's really a knitted rectangle.  You knit some ribbing, do some stocking stitch, knit some more ribbing, then fold in half and seam up the sides.  Add tassles to the 2 corners and you're done.

I love water bottle holders and knitting in the round but hate sewing seams, so I developed this pattern:

1.  Knit the "Circular Base" from http://www.interweave.com/knit/interweave_knits/pdf_files/FiestaTeaSet.pdf, until it is the same size as the bottom of your water bottle. 

2.  Purl one round to give the base some definition.

3.  Knit up the sides until it is the desired height.  Do a few rows of garter stitch (k 1 rnd, p 1 rnd) so that the edge doesn't curl.  Bind off.

4.  Pick up 8 sts on the bound off edge and knit a garter stitch strap.  Slip the 1st st purlwise with yarn in front on each row (move yarn back between needles and k to end), and you'll get a nice chain edge along the sides.

5.  Finally, on the other side of the tube, insert an empty needle into the left halves of 8 sts, then do a 3-needle bind off joining these sts and the ones on the strap.  If that sounds too complicated, you can always bind off the strap and then sew it onto the tube.

I wish I could post a picture but I don't have a digital camera or scanner!  I've made this a dozen times at least for friends.

Reason I post this is that the idea behind it was so lovely and fun.  Each person contributed a square or two, and we scheduled stitch 'n' bitches so that people could work on their squares.  Even the teddy bear is knitted, in a soft velour yarn using the pattern from Dovetail Designs: http://dovetaildesigns.com/AKNIT/mbear.html
 
Making this was so much fun I hope someone else in the office gets pregnant soon!
