I am not a professional baker by any means but I would think sticking with the 2 eggs that your cookie recipe calls for would be just fine. Most cookie recipes always have 2 eggs in them.

I saw the 'cupcake' mix today and was confused by it. Shouldn't a regular 'cake' mix make cupcakes? I don't know, I would think your cookies would turn out the same with the cupcake mix because it cannot be that different than their other cake mixes.
