Melt some almond bark in your microwave and dip pretzels into it. You can do alot of small pretzels or even get some of the pretzel rods and dip the ends in the almond bark and sprinkles.
The easiest gift in the world to make and people love them!

I have a ton of old cross stitch magazines that a lady at work gave me. They are from the early 90's if anyone is interested in those.
I also have pictures of pinups from a calendar that I have never used, they are just sitting in a box!
Random fabrics

I have a lot of random things so I can't wait for this swap to send some of them to a new home!

I've seen a few blogs that suggest painting objects with one solid color, like a gold, bronze, or perhaps granite, and using them as 'sculptures.' It would be a great decoration for a playroom.

Or, if your niece has siblings or other cousins, you could set up a play date to make 'trophies' for each other. Buy some wooden plaques, or something of the sort, and glue the toys together on each one in whatever combination the kids choose, then spray paint the whole thing gold and affix signs with the children's names and achievements. It would be a great way to get rid of the toys, and would be fun on a rainy day!
