3  BUDGET MEALS awesomeness!!!!! in Recipes and Cooking Tips by stargardener on: June 22, 2009 09:08:45 AM
Donniesgirl and I did a "Dave Ramsey" swap and she sent me an AWESOME cook book!!!!

In case you don't know "DAVE" he is a financial planner that encourages living debt free!  In order to get there living has to be a little lean around here...But I like to feed my family good things so here are some budget friendly meals.  I spent $66 on all of my groceries for the week and here are the 4 highlighted meals I made!  I have a 2 year old, myself and hubby to cook for with lots of left overs!  But these meals can easily be stretched or stuck in the freezer...to fit your family size. Enjoy!!!

On Sunday I took a bag of frozen chicken breast and cooked them in the crock pot over night, yep the whole bag!  Did I mention this is busy family friendly!!!  When I got up I divided it into 3 portions for the 3 times we would eat chicken this week.

orange chicken
4 chicken breast (enough for your family)
1 cup oj
1 cup instant rice(I par cooked rice on sunday night too...instant rice is a bit pricey for my budget! LOL!)
1 can chicken and rice soup
Put juice in a casserole dish, stir in rice.  Add chicken.  Top with soup. Bake at 350 for 30 minutes.
**next time I might use 1/2 to1 cup of oj concentrate to make it a little more tangy and a little water for moisture.

Impossible Chicken Broccoli Pie
1 package (10 oz) frozen broccoli, thawed and drained
6 oz shredded cheddar cheese
1 cup cut up cooked chicken (more or less for you family)
1 medium onion chopped
1/2 cup Bisquick type mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
Heat oven to 400. Grease 9 inch pie pan.  Sprinkle broccoli, 1/2 of the cheese, chicken, and onion in pan.
Stir Bisquick, milk, salt, pepper and eggs until blended. Pour in pan.
Bake 30-35 minutes or until knife inserted in center comes out clean.  Sprinkle with remaining cheese.  Bake for another 1-2 mins to melt cheese.  cool and serve!
Man I LOVE CASSEROLES!  Fab for lunch the next day!!!

Easy Asian Beef and Noodles
8 oz Rib eye (if that is expensive, choose another lean cut that is thin and slice it against the grain thinly, you are going to cook it fast and use a lot of flavors so don't feel obligated to get a really good cut of meat)
1 teaspoon dark sesame oil, divided
1 cup green onions sliced in 1 inch sections
2 cups shredded cabbage and carrots mix
2 (2.8oz) packages of beef flavored ramen noodle soup
1 1/2 cup water
1 tablespoon lite soy sauce

Trim fat from steak, cut diagonaly-against the grain- into thin slices.  Heat 1/2 tsp oil in non-stick skillet over medium high heat.  Add Steak and green onions; stir fry for 1 minute.  Remove and keep warm.  Heat remaining 1/2 tsp oil in skillet add slaw for 30 seconds.  Remove and keep warm.

Remove noodles from packages and reserve 1 seasoning pack for another use.  Add water and 1 seasoning pack to skillet, bring to a boil.  Break noodles in half and add to water.  cook nooddles 2 mins or until most of the liquid is absorbed, stirring frequently.  Add Steak and slaw back to pan add soy sauce and cook until heated thoroughly.

Cranberry Chicken
sorry no picture...it was GONE! before I could get one!!!
this is so good you'll never buy sweet and sour chicken from any chinese place again!

1 can cranberry sauce/jelly
1 bottle french dressing (I used 1/2 to 3/4 of the bottle)
1 package onion soup mix
chicken pieces (here is that chicken again!)

mix the cranberry sauce, dressing, and soup mix and add chicken!  Bake at 400 for 20-25 minutes until warm.  Serve over rice and some Asian veggie mix(remember we par cooked rice...break that out again!). TADA!

Thanks donniesgirl for all these awesomely yummy and cheap dinners!!!!

4  Re: IYP 12: The Sock Hop! gallery of awesomeness!!! in The Swap Gallery by stargardener on: June 07, 2009 06:01:35 AM
This swap proves you don't have to spend a lot to give a lot!
Welcome to the Dave Ramsey Swap!
Thanks to donniesgirl for swapping with me and making this a really fun experience.
In case you have never heard of Dave Ramsey he is a financial adviser who has a radio and tv show and he is horribly addicting.  He says his advice is the stuff your Grandma would tell you, like don't spend more than you have.  Sounds simple, but it is really hard!  Like when you (I) have been living for 30 year going to the mall as I saw fit not really thinking about what was or wasn't in my wallet.
So here I am trying to enjoy my life and still kick ol' Sally Mae out of my house, why is education so expensive???!!

donniesgirl sent me a copy of Financial Peace University.  That is Dave's 12 week(?) course on how to work the debt free goal thing and tell your money what to do.
I can't wait to listen to it!!  Thanks.

She sent address labels!  I love these!!!  they say "The Donley Family"  I love refering to my family as a family as much as I can!  The also say my address and I didn't want to just put that out there, if you want to stalk me you are going to have to work a little harder than that!  LOL!!!  And they say a little Dave Ramsey-ism at the bottom of each label!  how funny

Here are the pictures...finally!

recipes...Keeping your food budget down is one way I control my total budget...sometimes it sucks But I also love the challenge of cheap good meals.

crafts...This is actually a sore spot in my house...my dh grew up in a very generous home.  $$$ defined Christmas and birthdays, gift cards are a staple there.YUCK!  As a crafter this is anti-me.  They are very generous and I love my in-laws.  BUT my hubby still is stuck with this mind set...this has been very challenging for him.  Christmas we actually had an argument about giving crafts.  I have gotten him to compromise a little...crafts for recurring gifts(birthdays and christmas and mother's/father's day) and "once in a lifetime" gets a store bought gift/crafted combo (showers, weddings, graduations).

These books are crazy cool and full of yummy food and crafts!  I can't wait to get started

This picture is of the sides.  I just wanted you to see the work donniesgirl put into this short of taking pictures of each of the pages!

sandwich wraps!
I am going on a picnic on Monday!!!  I can't wait to use these!!!!
The brown one says, "The average millionare can't tell you who was voted off the island last night."  sing it sister! I need to cut my dependence on TV!  I watch way too much...even though we only have the basic networks...I am a TV junkie!
The paisley one says, "It's not how much we have but how much we enjoy, that makes happiness."

pot holder and iron on
The pot holder says
Broke is normal.
Why be normal?
Be weird!
and the iron on says "I see debt people" LOL!!!
This is a Dave Ramsey classic saying!  When I tell people that I don't use or even have a credit card any more...you hear "that's weird!" a lot.

Thanks donniesgirl!!!
really I am so anxious about the gifts I sent!  I love every one thing more and more!  You ROCK!!!
I am sorry about the super long post.  Just skip all the personal stuff and look at the cute things thats fine with me.  I  did feel like everthing needed a little explanation because we did a silly swap theme that others may not get just looking at.
Thanks for your patience!
OH and if you are inspired...read The Total Money Makeover!  Its like drinking the kool-aid!

5  dryer sheet in What the heck can I do with THIS? by stargardener on: April 04, 2009 06:51:04 PM
The whole time I was doing this it smelled so wonderful!
My daughter will be 2 this week and I wanted to show the world!
So I made this shirt and needed some stabilizer...I wanted to give it a try so here it is!  I used the used dryer sheet as my stabilizer!  It worked pretty well and tore out pretty well too.  The shirt is a waffle style long-john kind and stretches a lot!!!  But the dryer sheet worked well to keep that to a min.

Thanks for the idea!  I will probably do the same for my dh when I make his bday present only it won't say his age..too close to mine!

9  Re: Big Project Stitchalong 2009 in Needlework: Stitchalongs by stargardener on: March 02, 2009 12:19:27 PM
Here is my big project for this year/last year...
My sis is a mom of 2 boys and the bestest Mom I know!
This began out of the quote "mothers make men" by Thomas Jefferson
I thought it would be a nice picture with a mom, a kid, a lake, a peaceful wonderful scene ***sentimental sigh***
but then I thought about my sis and my nephews and this is what came up

I am going to embroider 2 roses on the right and 1 on the left probably in a chain stitch....the filling of the heart tried to kill me!
I can't wait to give it to her!

c/c welcome!  I am open to it all its for my sister and I love her, it has to be the best it can be!
