191  COOKING / Dessert / I can't make frosting :( on: September 19, 2007 02:08:29 PM
My boyfriend's birthday is coming up and he wanted a carrot cake. We decided on the one from Vegan With a Vengeance book as well as the coconut frosting she used. I just tried to make some right now because I kind of wanted cream cheese... and it came out horribly.

This has happened to before with buttercream frostings... the frosting was powdered sugar, coconut milk, margarine (I used butter) and vanilla. Instead of frosting, I get this lumpy, oozy... goo. It tastes like... lumps of butter floating in powdered sugar. The butter was very soft but it just won't mix together. I have a kitchenaid mixer and had it going at a frighteningly fast speed... still, ooze.


Could this be because I added all the ingredients together instead of mixing the sugar and butter first?
