I am not one of these fancy people with Kichenaid mixers but still want to make macaroni at home.  Does anyone know if its possible to convert a cookie press to a macaroni press?

I've been working on a pattern and have it down pat how I want it, but rather than writing it out, I would like to draw it up in symbols.  Now I know a person can download the symbols off the web, but is there a program out there where you can just pick the symbol and place it rather than copy.pasting each symbol in an image editor program?  Please help.

Does anyone know how to go about a hat/toque from brim to crown (ie., sideways) rather than around and around and not have it ve a tube that is gathered on top?  Its hard to find the right search terms to find something like this.
eta, I am not meaning those ones that look like a rectangle folded in half, but more like a regular toque

Anyways, how would you go about creating it?  One regtangle folded in half and then sew up the inner sides til reaching the "sleeve" holes?  Would that work or is there something more technical?

I've been googling  all morning and I just can't find examples of what I am trying to do before I actually plan a small project.  I  want to find photos of colour transition from colour A to colour B where you change gradually by adding a stitch or two of colour B each row, decreasing colour A.  You know what I'm saying; I'm not sure I'm explaining it well.  If you can think of any examples, please let me know.

Has anyone seen a tutorial for flutter sleeves like this ? Sorry its a Ravelry link; I didn't know how else to do it.  I know the picture is for a knitted thing, but it was the only picture I could find for this kind of sleeve.
