1  COOKING / Dessert / Daisy Summer Wedding Cupcakes on: July 27, 2012 11:45:04 AM
This past weekend I had the honour of making the wedding cupcakes and cake for an old coworker. They chose turquoise and yellow as their colours, and everything in the hall looked AMAZING! We had a few hiccups and made on-the-fly decisions during the process but it ended up really complemented the decor.

Everything is coconut cake with coconut buttercream. All of the decorations are handmade out of fondant (50 large flowers, 8 small and the "ribbon" band) except the cake topper (isn't it ADORABLE?!) and the tree stand. I added the flower vase to fill table space and some glass rocks to cover up a few scratches on the rental stand.

Haven't posted in awhile and am just gonna make this a quick one.

The last few custom orders I've had have been 'adult' oriented: a pirate penis bachelorette cake, boobie cupcakes and now these. I also made a Cars 2 themed set of cupcakes for a boy's birthday but I'll post those separately later. This girl requested "Dirty 30" cupcakes for her friend's birthday. They were Martha Stewart's marble recipe with just a standard chocolate buttercream and fondant/sprinkle decorations. I'm loving the cute wrappers I got at Michaels! Just going to post the best shot.

with peanut butter/chocolate swirl frosting.

This is a totally new thing for me!! It was a request from a friend. The cupcakes were a bit drier than I expected and I only baked them for 16 minutes... I would probably add more banana and/or milk next time. Other than that, delish!

This was the cupcake recipe, but I just made my own frostings:

I made these Pumpkin Cupcakes the other day and they are probably my second favourite all time after these chocolate ones I make. They're based on the ingredients in pumpkin pie so they are a little sweet and spicy, not savoury. EVERYONE loved them; they went so fast!! And check out the cute leopard liners Smiley

This is where I got the recipe (added 1/4c more pumpkin for extra moistness and I would recommend reducing the amount of cream cheese in the icing to about 1 1/2c):

So I've been working on the idea of this for about 6 months when the bride (and a friend) asked me to do her wedding cake. If you want to see my original samples then check out this post: https://www.craftster.org/forum/index.php?topic=347104.msg4040938#msg4040938

The concept seemed simple enough but as many bakers and crafters know when one little thing goes wrong it can add hours to a project. In this case it was covering two of the cakes with fondant - it was just a disaster of cracking for some reason! I am not a trained baker at all - it is just a hobby. But I managed to pull it all together the night before and added 75 cupcakes. I handmade the 200 red flowers with a sugar pearl inside each one. The black ribbons are stamped fondant. For my first time I was pretty satisfied (but am also a perfectionist so not completely!)
The cake and cupcakes are white almond wedding cake with a vanilla almond buttercream - simple but delicious.

everyone loves rainbows right? for the last 3 years i've made rainbow themed cakes/cupcakes for my friend's birthday. here are the ones for tomorrow!

and here is the sample top tier/cupcake for a wedding i am doing in a few weeks.
just white wedding cake with almond buttercream and fondant decos.
(terrible quality on craftster photo hosting i just realized after i uploaded... but you get the picture!)

i'll add photos of the inside of the rainbow cakes and my finished wedding cake once they come around.

but here are two of my most recent fondant decorated birthday cakes. the first one is a turntable for a dj friend, the second is a princess cake for a 19th birthday.... we had made an amazing royal icing tiara and painted it with lustre dust but unfortunately it hadn't quite hardened enough and it cracked when we tried to peel it off the wax paper. next time!

I made these with just a regular cream cheese frosting instead of the marshmallow/cream cheese combo. We tried it out but it was just too thin and didn't hold up shape. We used it for fruit dip instead. Smiley

I made these for my friend Amanda's birthday this past weekend. I kept some at home for the fam and they said they were the best cupcakes I've made besides the crme brule ones (also an I♥cuppycakes recipe: http://iheartcuppycakes.com/2008/07/19/creme-brulee-cupcakes/ ) which I forgot to take pictures of when I made them. Oops! Anyways, here are the strawberry filled chocolate with cream cheese frosting beauties:

These first "cakes" I made for my friend Nicole's 21st birthday. They're more like trifles (yellow cake cubed, layered with instant chocolate pudding+cool whip, crushed skor, and topped with crushed graham cracker and golden sugar.... plus decorated with gumpaste crab and sand dollar (made by me) and Guylian chocolate shells).

Everyone LOVED it... the only sad part was that I forgot to bring the shovels that went with the buckets to use as serving spoons out to the cabin because I was in a rush.

I originally found the recipe in a magazine.. I think it was just a People weekly or something? Anyways here it is:
(p.s. I used one recipe for two smallish-medium buckets)

1 (5.25 oz.) package of sugar cookies (I just used the graham crackers and golden sugar here because I couldn't find sugar cookies anywhere)
1 frozen butter pound cake, thawed (used Betty Crocker yellow cake mix)
2 large packages of chocolate instant pudding mix
3 cups milk
1 large container of frozen whipped topping, thawed ( i only used half the container
2 tsp. vanilla extract
4 chocolate covered toffee candy bars, finely crushed (I used coffee crisp--a household favourite)
Garnish: chocolate candy shells

1. Crumble cookies; process until finely crushed; set aside. (Cookies will resemble sand). Cut pound cake into 1-inch cubes; set aside.

2. Whisk together pudding mix and milk; add whipped topping and vanilla, whisking until smooth.

3. Place half of cookie crumbs into a 3-quart sand pail; top with one-third of pudding mixture, half of cake and half of chocolate bars; continue layering pudding, cake and chocolate bars, ending with a layer of pudding. Top with remaining cookie crumbs. Cover and chill at least 30 minutes. Garnish with candy shells if desired.

I also made a sand castle cake for my friend Jordan. This was again yellow cake, stacked in the shape of a sand castle, with ice cream cones as turrets, and the flag was gumpaste on a toothpick. It was iced with colored vanilla frosting and golden sugar, and decorated with gum paste sand dollar, starfish and chocolate shells. Easiest cake I've ever made!
