This is a go-to easy week night recipe for me, and also an easy one to double and take as a pot luck for work.  It is easy, and tasty, and an easy meal to make by adding a tossed salad and rice.

It is a sweet, savoury curry, not hot (unless you want to make it hotter!).  The sauce is lovely over rice.



I just made a batch recently for a pot luck...



Northern Thai Curry Chicken
serves 4
1 tsp sesame oil
1 lb boneless, skinless chicken breasts, cubed
2 tbsp red curry paste (I often use a bit more, to taste)
1 tbsp curry powder (again, using a bit more to taste)
water
1/2 cup coconut milk
1/4 cup tomato paste
2 tbsp fish sauce
2 tbsp brown sugar
2 medium tomatoes cut into wedges
1 bunch cilantro, rinsed

Heat oil in wok or large pan.  Cook chicken to lightly brown outside.  Stir in curry paste and powder to evenly coat chicken.

Stir in enough water to cover (I actually find this to be too much water and enough to come up halfway is more than enough) and bring to a boil.  Reduce heat, cover and simmer until chicken is no longer pink.  Stir in coconut milk, tomato paste, fish sauce, sugar, and half of the tomato wedges.

Cook and stir over low heat until the sauce is smooth and creamy.  Mix in remaining tomatoes and cook until tender and warmed through.

really, I swear I am not so vain that I am making tonnes of crafts of me me me....  But I participated in the Craftster Trading Card swap again and wanted to make a me that was based on one of my favourite crafts - very much inspired by the one Belladune did of herself last year

So to do that, I made a me in seed bead form - based on the stamped image I made of me last year for the first incarnation of the CTC swap.



I used whatever size 11/0 rocaille beads that were in my stash, and Nymo, in peyote stitch, after sketching out a pattern on graph paper.  I did not want it to take forever, so I did a basic image, without too much details in terms of shadows, and shading - that and I really wanted to use stash, so did not want to take forever at a bead store picking out various shades too (and yes, remember how long it took me to pick out the perfect green for the wasabi for my beaded sushi, it really would take me hours of comparing beads to get the shades right - and I would spend another $100 on other stuff in the meantime too - damn, I love bead stores).

So this ended up being about 4"x5".

I then took a picture of it, shrunk it down, and printed it, to make the end result of this year's CTC card.



So yes... it's all about memememe!

I received from geekgirl1000100.  She sent me a double sized package of notecard goodies:



The backgrounds are salted watercolour, with botanical die cuts in front as foci/contrasting patterns.  That has always been on my to-do list for things to try.  I love the random patterns produced by the salt.  I also love the colours!

She stamped the envelopes with these cute owl and bird images to personalize them more - great idea!



... and the notecards are blank, but she sent stamped labels to use for them - also a great idea!

That is a cool spinner!  I have mine in a open box I can flip through easily, but I am contemplating something else.  I am contemplating something with those countertop towel holders, or the tabletop scrapbook page displays, like how I keep my favourite recipes.  Binder with the card holders may be the most practical.

I did send, but also forgot to mention that in Canada, this past weekend was a long one as Monday was a holiday, so Canada Post probably did not pick up any of the mail until Tuesday.  But this is what you can expect from me...

I love waffles... and pancakes.  We normally do a savoury breakfast when Jim and I have breakfast together.  Otherwise I do overnight oatmeal, sexied up with fruit and Greek yogurt.  But every once in a while I LOVE a sweet breakfast.  Because Jim is Celiac's I have had to abandon my usual favourite recipes (at least when he is around), and try gluten free versions and these ones were pretty good so I thought I would share them!

First is a gluten free pancake - it was light, fluffy, tender.  Even though Jim is not as big of a fan of the sweet breakfast - he did enjoy these.  So did the dog when I gave him a little one... but then again, he is a dog (licks butts, eats poop, and all that) - so his opinion is less relevant...


Recipe link here.  On of the keys was to separate the egg white and yolk, and to beat the white.


Here are the waffles I made - clickity for the link to the recipe - the funny thing is that my usual go to recipe uses beaten whites for lift and air - and this one did not - rather opposite for both recipes than what I am used to.

I used Robin Hood brand GF flour blend (a Canadian brand that is available nation-wide), which does have xanthan gum, versus gum-free blends, so that could make a difference in texture.  On saying that, measure by weight as there are so many different blend recipes/brands.

My card - I started with reused boxes I gessoed, and then added acrylic paint to.  I did a thick layer of paint ans smooshed the paint to create texture in the paint.  After that dried, I picked out the detail with some bronze paint, dry brushing on, and pulling it off with a wet wipe and dry towel.  I stamped on a swirly circle stamp in pigment die and let that dry.  The back I dry brushed the back with ivory and green/blue acrylic, and stenciled with a pearl paint in a .  I cut them into ATC sized cards, and distressed and inked the edges.  That would be the background.

In between that, I beaded the mini me in size 11/0 seed beads based on the image I used on my first card.  I took a picture of the finished and printed it in a smaller size to fit the card at Kinko's - the printed pic was perfect - it showed so much of the bead detail, and they used such a nice paper.  So happy with the printed image.  I trimmed them out and inked the edges (I hate raw paper edges).

For the back, I just printed the factoids on regular printer paper and trimmed them out and inked them.

I attached everything with gel medium.  I stamped and hand numbered the cards, and because I wanted mu cards to have more of tactile element, I added some iridescent paints to gel medium and stenciled over the front and back to add the petaled stenciling.

A lot of steps - and there was a lot of waiting for gel medium to dry so they would not stick together, but it was a labour of love and I wanted the card to represent a lot of the things I love - craft-wise anyways - beading, texture, inking, stamping, shimmer, reused packaging, etc

Anyone else having trouble with the thumbnail pictures - I keep getting the green square with the "trouble accessing image" notice.


I can see the posts themselves fine, with pics, but it would be nice to see the preview.
