242  Caramel Chocolate Covered Apples in Dessert by MissingWillow on: October 30, 2012 04:56:47 AM

I make these every October.  They're so easy!  I used fuji apples in the past until I discovered giant honey crisp apples.

3 giant apples (or more if you decide to use smaller ones)
1 bag of caramels (I used Kraft caramels)
1 bag of chocolate chips (I used Ghiardelli dark chocolate chips)
1 Tbsp. corn syrup
1 tsp. vanilla or vanilla bean paste

Wash apples and set them on parchment paper.  I use a small plate for each apple for ease of transport.  Microwave the caramels and corn syrup on medium power at 30 second intervals until the caramels melt.  Stir in vanilla.  Spoon over the apples then refrigerate for at least 30 minutes.

Melt the chocolate chips in the microwave on medium power at 30 second intervals until melted.  Spoon over the cooled apples.  At this point, you can also add nuts, sprinkles, candies if you like.  We are purists.  Cheesy

To serve, cut the apple in slices and remove the seeds.

Gebah sent me wall art featuring some of the animals we raise.  She captured our great pyrenees, sheep, goat, chicken, border collie and bees.  This is so well and thoughtfully done.  Thank you so much, Gebah!

Those baby hats are adorable!

I found two more jars of cherry jam, they're in my shop.  So is a jar of blackberry jelly that I added a splash of blackberry brandy to when I made it.   Smiley

Gorgeous gorgeous gorgeous socks!  Lucky me!

And I have a lucky daughter, too!  She's a portal nut, and I claimed a custom stenciled sleep tee for her in a portal theme.  She's gonna love it!

249  Re: September 2012 Birthday Swap - Gallery and Discussion in The Swap Gallery by MissingWillow on: October 19, 2012 10:39:50 AM
alwaysinmyroom claimed me for some birthday goodies and, boy, did she spoil me!  She knows how much I love this time of year, and how much I love to cook.  She made me the most beautiful fall-themed apron!  This one is going to carry me right through holiday baking season.

A rainbow hued winter hat!  I just love this.  It fits me perfectly.

Halloween stencils, for dusting powdered sugar on top of cupcakes and Ouija Board Mints (they are yummy!)  I don't know what I will do with the tin when it's empty, but something fun!

Fabric!  I hoard Halloween fabric, I love Halloween fabric, I love THIS Halloween fabric!

My feet were cold so I popped these awesome socks right on.  Love them!

She made me the most AMAZING handmade cards!!!!  They depict animals we raise on our farm.  The back of this one reads "This time the sheep were ready..."

"Milking the goat on Halloween did not go well...."

"The sheep shearer might have sheared a bit too much..."

"They waited too long for the cows to come home..."

My kids are going to LOVE these as much as I do.  You are incredibly talented and generous!  Thank you so much, alwaysinmyroom!
