I love your fabric choice!  I. just bought that pattern today.  Simplicity is on sale at Hobby Lobby.  I have been looking for a cute peasant style dress; I can't wait to make one for my 2yo.

I made this for my friend's daughter's second birthday.  I used the Homestead Greeters epattern.  It was super easy to sew, but the yarn mane was a pain!  I crocheted a coordinating pink/rainbow cowboy hat using a modified version of the free Child's Cowboy Hat pattern on Ravelry.

I just made a unicorn hobby horse for a two-year-old, and I was concerned about the head staying on, too.  The solution actually came to me in a dream--staple gun the fabric to the dowel at the gather point.  I used glue as well for added hold.
