2  COOKING / Dessert / well i think something is a little fishy here.. on: May 23, 2008 09:17:23 PM
so me and a friend have our birthday's on the same day (born at the same time too, just different time zones!) but im never here to celebrate with her. We deicided that this year we were going to celebrate turning 21 about 1.5months early and by going to see dallas green (<3) preform. Well since it was a birthday celebration we decided that we needed a cake to go with it, o here it is....
its a chocolate cake with a chocolate/raspberry/creamcheese mousse filling and frosting
and i used marshmallow fondant to cover it
p.s. this was my first time making and using fondant, and i love it!
many more fondant cakes to come Smiley

3  COOKING / Recipes and Cooking Tips / need recipes for 3000km bike trip! on: May 14, 2008 02:29:48 PM
hey guys,
so in 16 days i leave with 30 people from the amazing organization global agents for change (www.globalafc.org) *if im not allowed to have the website up please feel free to delete it and sorry if i broke any rules by posting it up* for a 3000km bike trip from Vancouver, Canada to Tijuana, Mexico all as a way to raise awarness of global poverty and funds for micro-credit.

..anyways, most our meals will be provided by generous hosts in the towns that we will be staying in, however we will have to cook some of our own meals sometimes so im asking you fellow craftsters if you have any great recipies for dinner that are decently cheap to make, feed 30 hungry bikers and have decent nutritional value.
They can be included meat but veggie recipies are prefered Smiley p.s.we already have a great chilli recipie Smiley
4  COOKING / Dessert / who needs cake when you can have sushi on: February 28, 2008 09:21:39 PM
my friends birthday is tomorrow
and she is a leap year baby so instead of turning 20 she is turing 5
we both live in vancouver and LOVE the fact that we have such an abundance of sushi
and i decided that nothing says happy birthday like sushi!

so the cake itself is a chocolate cake, with chocolate mousse layers (x4) and strawberriers in the middle layer
the outside (seaweed) is made of buttercream icing, with quite a lot of green/red/blue food colouring
the rice is shredded coconut
and the filling of the sushi is just fruit gummy candies
wasabi is more of the green icing and ginger is super thin slices of strawberries

5  COOKING / Vegetarian / Vegan / "chicken" nuggets and fries..... on: February 06, 2008 04:15:27 PM
With it being midterm time and me being stressed out to the max because some sick fool put my organic chemistry midterm on monday and then on tuesday my physics and calculus midterm.. so all i really want is a nap and food that is bad for your system and your soul...specifically the type of food that is deep fried and salty!
However, being a bit of a health food nut and not really eating meat this whole craving doesnt really work for me but when my brain decides it wants fries and chicken nuggets what am i to do???...put a healthy/ veggie spin on it of course!
So, I went out and bought a huge amount of packed tofu (hard/drained tofu) for really cheap and also yams because i really dont like regular potatoes and yams have so much flavor and goodness in them Cheesy then i came home and slice the tofu into chicken nuggetish slices and poked holes in the slices with a fork and put them in a bowl with hot sauce and sweet chili sauce and just let it chill out in there. Then i took my yams, sliced, covered with salt, cumin, pepper and garlic and a bit of olive oil. Put them on a baking sheet and cooked. When they were almost done i took the tofu, and dipped the slices into bread crumbs and pan fried it..YUM.......and i had my "chicken" nuggets and fries and they were amazing.

and now here is the recipie...
- 1 med yam scrubbed and cut into fries shape
- good pinch on salt and pepper
- large sprinkling of cumin and paprika (or any types of herbs you like)
-drizzle of olive oil
-- combine all ingredients and mix. place on a baking sheet in a very hot oven (i have mine at about 415-425) and let bake for about 15 min. Check after 15 min, and if crispy flip over to other side and cook for another 10 min

-firm drained tofu cut into slices
-sweet chilli sauce (need enough to make a marinade, i used about 4 tbsps with about 1 tbsp of water mixed in)
-hot sauce
-bread crumbs
--take tofu and poke holes into it with a fork. Place it in a ziploc bag with the sweet chilli sauce and hot sauce and let it chill out for however much time you have. After, take the tofu out of the bag and dip it into the bread crumbs to coat it. Place on a hot slightly oiled pan and cook on both sides until crispy and golden brown

and there you have it....super easy, yummy, healthy, "junk" food for the stressed out soul!
