Oh my goodness! This trifle was a huge hit at a Memorial Day gathering that I attended today. It was a last minute, throw-whatever-you-have- in-your-kitchen together, kind of dessert. Keeping this recipe to myself would be rude of me, so I am going to share.
Triflin' Strawberry Banana Trifle
1 pound cake*
Quart of strawberries
3 large bananas
7 oz tub of marshmallow creme
8 oz cream cheese
9.5 oz jar coconut curd
1/2 c. milk
1 tsp. pure vanilla extract
Cut pound cake into 1" cubes. Slice washed strawberries and bananas into 1/4" thick pieces. Set aside.
In a mixing bowl, whisk together marshmallow, cream cheese and coconut curd. Add milk and vanilla and give a good whisk. You should have a nice, pudding like consistency. If your mixture is too thick, add a bit more milk.
Now you just layer your ingredients in a bowl(a trifle bowl is not necessary, any ol' bowl will do the job). I started with the strawberries, then bananas, pound cake and coconut curd mixture. Repeat layering until you have used your ingredients up.
Chill until ready to serve.
*pound cake can be homemade or store bought.
