Title: Carrot Cake & Cream Cheese Icing

Read entire recipe before beginning. Gather ingredients and utensils.
Grease and flour pan(s). 9X13, 9" Round (2), OR 8" Square (2). Preheat oven to 350*F. Peel and grate Carrots.

Mix well in large bowl:
1 1/3 C. Flour
1 C. Sugar
1 1/2 tsp. B. Soda
1 tsp. B. Powder
1/2 tsp. Salt
1 tsp. Cinnamon
1/2 tsp. Cloves
1/2 tsp. Nutmeg
1/2 tsp. Allspice
Add and beat on low speed:
2/3 C. Oil
3 Lg. Eggs
Stir in:
1/2 C. Crushed Pineapple
1 1/2 C. Finely grated Carrots
1 C. Finely chopped Pecan Nuts
(If you like them, you can add 1 C. golden raisins)

Scrape the patter into the Pan(s). Bake until toothpick inserted in the centre comes out clean.
30-35 minutes for Oblong
25-30 minutes for Round or Square

Frost with Cream Cheese Frosting. Decorate with Finely chopped Pecan nuts.

Cream Cheese Frosting
8 ounces Cream Cheese
5 Tblsp Butter
2 tsp. Vanilla
2 - 2 1/2 C. Icing sugar.

In a medium bowl, beat until just barely mixed. DO NOT over mix.

{To make a heart shape, bake 1 round and one Square. Cut Round in half. Put on 2 sides of the square, which has been set like a diamond. If required, trim your round cake to fit together.  If one is "too high", don't worry too much about it, the icing will hide it.}

This is my man's favourite cake, yum yum yum! I need to make it with gluten-free flour but there are lots of blends at the grocery store for just such a thing. Thanks for the recipe!
