Okay, I noticed there wasn't anything on here relating to matcha cookies so I thought I'd throw this up. I made these tonight. My recipe is modified from the "Matcha-Matsu-White-Choko Cookies" recipe. You can find it at http://blog.jagaimo.com/archive/2005/05/11/389.aspx.

I left out the fancy parts and managed to "vegan-ize" the recipe quite easily.

Plain Matcha Cookies

cup Earth Balance Spread
tsp salt
cup Taikoo unrefined golden granulated sugar
1 egg replaced (1/4c. applesauce mixed with 1/2tsp. baking powder)
tsp. vanilla (the fake stuff because I'm not rich!)
1 tsp. matcha powder (found in the tea section at the Chinese superstore near my house)
1 tsp. baking powder
1 cup flour

Cream butter with salt and sugar.
Add matcha, "egg" and vanilla and mix until consistent.
Stir in baking powder and flour.

Drop in 1 tbsp. portions on a baking sheet with room for 3" diameters.
Bake at 375F (190C) 12-15 minutes until edges are lightly browned.
Rest before removing from sheet.
Yields 16-20 cookies.

I ended up with exactly 20 little cuties.

I have been looking for recipes using matcha!

Thanks...I definitely want to try these!  Healthy tea benefits in a sweet treat!
