I posted a thread once about "how many sweaters did you have to knit before you actually liked/wore one" because I had the same frustration you did.
It took me about 4-5 projects before I actually did get to one and even that wasn't perfect.
I realized a few things in my learning process
- the importance of gauge (i used to think 1 st wouldn't matter , but it really does!!)
- the importance of a good yarn substitution (i was substituting all kinds of yarn, regardless of weight and composition)
- the importance of understanding your own body. Patterns are created with a certain figure in mind and then expanded on, but you have to realize that someone's size 32 will be very different from YOUR size 32 and learning to work with your own body is really important.
