i'm staring my career as a teacher this summer, which means i need to start packing my lunches again!  do you guys have any suggestions for some yummy, healthy vegetarian recepies that i can take to school?  i'm thinking of making some batches of california rolls and some sesame peatnut noodles because those are things that are good cold/room temperature (i'm not counting of having a microwave available) but i need lots of suggestions to help me keep my lunches interesting... i've got years and years of packed lunches ahead of me and i don't want to get bored!  i'm adventurous with my food (as long as there's no meat or gelatin in it) so go nuts!

Heya fello veggie.  Grin  Here's some sandwich suggestions:

Cream Cheese
Walnuts and dates, chopped
Honey or maple syrup
Date nut bread

Tomatoes and Cheddar Cheese
Cucumbers
Eggless mayonnaise (or with eggs, if u eat eggs)
Rye bread

Peanut Butter and Jelly
Banana
Soft wheat bread

Avocado and Sprouts
Green onion, chopped
Sesame salt and olive oil
Pita bread

Grilled tofu and lettuce
miso or tamari
whole wheat bread

Mashed tofu
green onion and celery, chopped
Eggless mayo
Pita bread

Melted cheddar or swiss cheese
sauerkraut
rye bread

enjoy! add cookies or fruit or whatever you feel like to satisfy that sweet tooth. happy eating!

I like to make a kind of apple crisp, I bake a batch & package it in single servings for a few days. It's great for breakfast or lunch.

Peel, or not a few apples & corse chop them. ( I prefer granny smith & macs)
sprinkle with a little brown sugar & lemon juice.
add pecans or walnuts
& a little honey.
Bake till bubbly.
Let it cool them packge in smaller containers.

I make my fiance lunch almost every day (I know, but he works so I can stay at home so it's only fair really... Wink) and I try to make it vegetarian unless he insists on meat.  Cheesy

I make a lot of fruit salads! It doesn't matter if their room temp and they can be so varied it's not like having the same thing over and over again.

He loves salads luckily so I make cesar, greek, tuna, cheese, mozzarella tomato and basil, and generally anything that I find in cupboards salad..  (not all veggie but probably could be) It's all down to the dressings with salads really and I make and buy exciting ones and pack them separately to avoid sogginess .

Then there's pasta salads of course.

Peeled carrots and hummus (for dipping) Yummy!!

I'm sure there's more but got really hungry now so got to go!  Cheesy

I like to make calzones, they are pretty cheap and easy to throw together and are a great way to clean out the fridge.  I buy pre-made pizza dough in the bakery section of the supermarket.  I like to cook up whatever veggies I have on hand, though my favorite is spinach and mushroom.  Roll out the pizza dough on a cookie sheet and put the cooked veggies on top (I add chesse too ,so if you eat cheese that is really good).  Then roll up the dough and veggies, jelly roll style and bake till golden brown.  This usually last my sister and I a few meals.

I like to make wraps...

pita, tortillas, or flat wraps
+
layer of hummus
+
shredded carrots
+
baby spinach

roll 'um up and that's it. I buy everything ready made in bags cause I'm always running late for work and I eat these just about everyday.

i love making salad wraps! i just take a whole wheat tortilla wrap, my fav salad dressing (sandwich meat but you dont have to use that) and all the salad fixings.. roll it up and MMMMMMMMMMM yummy
