so, i'm a head cook in my co-op at school (http://osca.wilder.oberlin.edu/ if you're curious), and i pretty much never look at cookbooks unless it's for inspiration ("how it all vegan" is my favorite), since cooking for 60+ people gets tricky when you have to do any measuring.

anyway, i've been trying to make some yummy things at home for myself, now that it's summer, and i came up with some things that i really enjoy. sorry there aren't any measurements, i seriously just eyeball or "to taste" everything.
if you're bad at estimates then i definitely suggest looking this kind of stuff up at allrecipes.com or something. you don't want to mess this stuff up! Smiley


jerk seitan
---------------
-1 pkg of seitan ( i used white wave brand)

marinade:

-white vinegar
-soy sauce or tamari
-orange juice
-lime juice
-olive oil
-cayenne
-habanero (tiny bit, and def. only for the serious spice lovers)
-chili powder
-sweetener (i used maple syrup, but anything is fine. just a bit of it.)
-black pepper
-thyme
-sage
-fresh garlic all mushed up in a garlic press (lots!)
-coriander
-cumin

soak chunks of seitan in the marinade for 20-30 minutes or so. fry up on a pan
with some finely chopped onion. serve over brown rice. yum yum yum.


cake batter/cookie dough

this is especially for eating uncooked. some people think it's gross, but this doesn't have any eggs or anything in it, so .. whatever.

-non-white flour (spelt or whole wheat are good. white flour is supposed to give you an upset stomach when it's raw)
-canola oil
-sweetener
-vanilla extract
-soy milk or water

once you get that to the consistency you want, add any or all of the following:

-coconut shreds
-cocoa
-chocolate chips (tropical source is my favorite. totally vegan and tons of different flavors)
-banana
-apple
-raisins (or any other dried fruit bits... cranberries, cherries...)
-walnuts
-oatmeal

... or whatever you like in your cakes/cookies.
this is best made in a tiny one-serving portion as an awesome non-threatening midnight snack or craving-stopper. works wonders, and you won't get salmonella.
