I have to share this one.....
Simple but so good!!!  And no measuring equipment required!

-avocados (1-2 cubed)
-red onion (1 diced)
-garlic clove (2-3 diced)
-red or green pepper (1 diced)
-1 lemon (squeezed)
-sea salt (sprinkle)
-black pepper (sprinkle)

Put cubed and diced avocados, onion, garlic and pepper in a bowl.  Cut Lemon in half, squeeze out juice and pour over ingredients.  Sprinkle salt and pepper over everything.  Lightly toss salad.  Enjoy!

(P.S....I have a very "hip" grandma!  Shes always creating new dishes for me when I come over)

This dish rocks on a hot day.  I like to dip tortilla chips in and eat it that way.

Just add cold Corona's with lime, a nice sunny afternoon, music, and you will feel like your on vacation!

Mmmm... Sounds yummy! I'm such a sucker for avocados. Can't get enough of 'em. And Coronas aren't half bad either.  Wink

Avocados are great!

I actually make an avocado salsa that is very similar to your Grandma's. Here is the recipe:

2 diced ripe avocados
1/2 diced red onion
1 seeded and shredded chilli

For dressing combine 1 tablespoon olive oil, 1 1/2 tablespoons of lemon or lime juice, sea salt and cracked pepper. Pour dressing over avocado salsa and stir carefully to combine.

This is absolutely great as a side to grilled fish or chicken and I love it with fresh white bread or lavosh bread as a snack! I hope you enjoy it!
