I don't know how any of these would work as sock monkeys, because I've only ever made one, and that was with a TON of help from my friends...

Great monkeys! I think maybe the mismatched socks we have around here might make good monkeys.

For hair, another idea is to sew 100 % wool yarn to the head. If you run it through the washing machine on a hot water cycle (just do a load of laundry) before you stuff it, it felts and makes wonderful dreadlocks.
