this is my new obsession:

(I make it in a little 4" tartlett shell but you could use anything really)
Take about a cup of graham cracker crumbs, about 1/4 cup quaker oats, and 2-4 tablespoons melted butter. Mash until crumbly; then put in tart shell and press up the sides. Bake in 400 degree oven for 5-10 minutes, just until slightly golden.

Meanwhile make the blueberry filling, in saucepan on medium heat, mix 1 small package of fresh blueberries, 2 tablespoons cornstarch, 1/4 cup LIME juice (you could use lemon but lime makes it taste much more interesting), and about 3 tablespoons sugar (or more depending on how sweet you want it and how tart your blueberries are). Boil just long enough for it to thicken.

Pour filling into your graham cracker crust, and sprinkle a bit of oats on top. Bake another 5-10 minutes and voila!

I know! sometimes there are decent sales on them here but the price should come down some in summer/spring when they come in season.

I tried this, and it was really good!!  My blueberries were a little too tart and I didn't add enough extra sugar, but it was still great...I got to eat about 1/4 and my 13 yr old hogged the rest!  Thanks for the recipe, it was gourmet for me!

Have you ever tried this with frozen blueberries?  I usually have some around for smoothies as they are the only truly affordable kind of blueberries this time of year.

ajerashen- thank you! I'm just glad somebody tried it.
jillianb - I have. the problem is I've never found any frozen blueberries with any flavor. but in principle they'll work.
