basically I want a pattern for a hood that is tight-fitting (won't fall down!)

something sort of like an adult sized version of these childrens balaclava hoods would work...

If you have an A.C. Moore Craft store near you, they have displays for these in knitting and crocheting along with the yarn for the job- a pattons wool.  The purpose is actually helmet liners for the boys overseas.  Its a charity thing they are running, but the patterns are great, (they had examples), free,  and hopfully can be found in your area!
