OK, I just knocked out about 5 dozen of these Chocolate Cherry Mice in about an hour (but they still need some cooling), which will make great hostess gifts, besides being tasty and adorable..


FIRST, gather all your stuff needed:
1) Maraschino cherries with stems (stems become mouse tails)- Drain and dry them off as best you can
2) Hershey kisses- I have no idea whether these are available outside the US, or what you'd call them anywhere else
3) Sliced almonds (try to pair them in similar sizes- 2 per cherry- which become the mouse ears)
4) Chocolate for melting (I prefer chocolate chips melted in the microwave, be careful to melt only about 20 seconds at a time, and DON'T LET ANY WATER GET IN THE MELTING BOWL or it will "seize up"- Very bad and you have to start over again...don't overcook the chocolate, you want to melt it not incinerate it! Melting or dipping chocolate can be used but I think it may have an aftertaste)


Melt the chocolate (BUT NOT the kisses) and start dipping each cherry by holding onto its stem/tail. As you lift it out of the chocolate, attach a kiss to the end opposite the stem (this becomes the head), and place on a clean sheet of wax paper......

Before the chocolate sets up insert a pair of almond slice ears between the kiss and the cherry body.
This can get a LITTLE MESSY so you'll probably want to stop and wash the chocolate off whatever you've gotten it on, before you Dot the eyes on with pink gel icing (eyes are cuter if you put them very close together)


If you can resist the urge to gobble them up, you'll have a nice army of mice to spread out to however many hostesses you need to thank.

I made a bunch of these with my former MIL one year.  They are so fun to make and easy.  We took them to the nursing home where her father stays.  She reads to them and always takes a themed snack to go along with the book.  That trip she read them Twas' the Night Before Christmas and we took the chocolate mice and Nutter Butter Reindeer.
