This makes a great gift, or a great appetizer at Christmas.

Summer Sausage:

Use at least one pound of ground meat (beef or turkey-lean turkey NOT extra lean)

per each pound of meat add:

1 teaspoon Morton's Tender Quick Salt
1/2 teaspoon regular salt
1/4 teaspoon liquid smoke
1/2 teaspoon garlic salt
1/2 teaspoon black peppercorns
1/2 teaspoon mustard seed
1/4 teaspoon ground red (cayenne) pepper

Mix ingredients well. Cover and refrigertae 24 hours. Mix again. Refrigerate 24 hours more.

Make into 1-pound rolls and bake on broiler rack for 8 hours at 150 degrees Fahrenheit. (You should turn it once to get uniform color all around).

These are truly cooked and safe to eat after being at this low temperature. This is our family recipe passed on to me by my grandparents. We always received this summer sausage as a Christmas gift and it is THE BEST!
