Biscotti!  So easy, but unfortunately I don't have the recipe with me. My boyfriend is in culinary school, so it's just delicious. You can find the recipe just about anywhere, and it really is as easy as it looks.

Ooh, sorry sorry!  My brain was on auto-pilot and I didn't think to check this thread for a while.  I promise that I'll get the peanut butter truffle recipe out tonight and post it tomorrow.

Ok, here are the truffle recipes.  If you've got a very small scoop, that would be really handy for shaping the insides, otherwise it's pretty messy by hand.  

the super awesome and easy peanut butter truffles
much easier than the other recipes since they don't require you to dip the balls into chocolate (a messy and frustrating task) but instead just roll them in chopped peanuts.  Plus these require only five ingredients.

chocolate mint truffles (middle of the page)
After shaping mine into balls and dipping into the melted choco, I put crushed candy cane on top to differentiate them from the raspberry ones.

orange truffle cups
I made these in raspberry flavor with liqueur and didn't make cups but into truffle shapes and dipped them in chocolate.  So if you want to do the same, start where it says "Beat unsalted butter..." and then just follow another recipe that describes how to dip them in the coating.

I am a tamale makin' fool, although I have to admit I cheat and use the pre-prepared masa w/o lard, because lard just scares me. But, I make a dessert tamale that ROCKS ( if I do say so myself) . It's got apple pie filling, cinnamon in  the masa and I top it with vanilla ice cream and a caramel sauce.
