I am making my niece a cute little christmas hat, but I know the wool will be too itchy. How do you knit a hat liner with softer yarn? I tried googling it, but I didn't come up with too much. Thanks!

Make your hat, and then pick up stitches just inside the brim or hem, all around, in the purl loops of one row.  Pick up as many as you'll need to make it fit with the gauge of the liner yarn.  Knit in stockinette or rib until it's as long as you want - a lot of people make it just long enough to cover the forehead - leave it unattached and bind off, or pick up purl bumps again at the appropriate spot and do a three-needle bindoff all around.

Or you can (after picking up the purl bumps) knit an entire replica of the hat (so that you have one hat inside the other).  You do all the decreases in the same places as you did in the original hat, then when you're done, just shove it up inside the outer hat.
