I'm cooking my first Thanksgiving meal and need a vegetrain friendly gravy. Any tried and true recipes out there?

10 bonus points if it's vegan.

Here's mine...totally simple...but I love it.

Heat a can (or more depending on how much you need) can of vegetarian vegetable broth...spice it up...salt, pepper, sage, poultry seasoning etc..whatever you like...then thicken with a slurry of corn starch and water...heat till thickened...

This gravy is fantastic!  Please try it...we're not vegetarians, but I make it all the time...its BETTER than meat based gravys!

Shitake mushroom gravy...

2 cups dried shitake mushrooms
1 clove of garlic minced fine or crushed
3 cups water
2 tables cornstarch (maybe a little more)
salt and pepper to taste

Simmer the mushrooms in the water with a little salt and pepper for about 20 minutes, until the water turns golden brown.  Remove mushrooms, reserve stock.  Take stems off mushrooms and discard.  Chop the mushrooms fine.  Make sure the stock is cool, then whisk in the cornstarch a little at a time, until the lumps are gone. Add chopped mushrooms back to the stock and simmer and stir till thickened.  Add salt and pepper to taste.

Shitakes have a really great flavor...not like regular mushrooms.  This gravy is fantastic over garlic mashed potatos...or anything really.  And its Vegan!

I'm with bella's recipe, but instead of thickening with cornstarch, I'd whirl it in the blender with a dark-colored legume to beef it up a bit (har! beef!). To give it a meatier taste, try some roasted red peppers and a few black olives.

i tryed this one recently and LOVDE it! it's vegan, i'd imagine if your just veggie you could sub the pareve margarine with good ol' regular margarine.

    * 1 tablespoon pareve margarine
    * 1/4 cup all-purpose flour
    * 3 cups vegetable broth
    * 2 tablespoons miso paste
    * 2 tablespoons warm water
    * 2 teaspoons soy sauce
    * 1/4 teaspoon onion powder

DIRECTIONS:

   1. In a small bowl combine miso and warm water; stir until miso has dissolved.
   2. In a 2 quart saucepan, melt margarine over medium heat. Stir in flour until dissolved. Add vegetable broth, miso mixture, soy sauce and onion powder. Cook, stirring, over medium heat, until thickened.

yields about 2 1/2 cups

Just wanted to gush over the shitake mushroom gravy recipe. Made it for Thanksgiving and it was a hit. I'll be making this gravy many times over. Thank you for all your help. If you are interested in more vegetarian holiday meal ideas I updated this other thread with the entire menu we used.
