Is there some knitter's trick to estimating out how much yarn you will need for an item?  

The logical answer, I guess, is that you knit a swatch, count the stitches and then divide inches by stitches but oy vey, that also means you need to know how many rows you'll end up with.  

All I need is a guesstimate chart.  Anyone know of one?

Aha!  I answer my own question.  I found a great chart on Purl Soho's web site.  I learned to knit at this store last January.  Beautiful, well-edited yarn, if on the slightly pricey side.
