I was really hoping to see where I could rangle some Absinthe   Grin Oh well. i bet any schnapps that you like would work. My candy making skills are nothing worth mentioning, but I would think the higher proof, simple spirits (vodka) wouldn't work as well. Or I could be way off.  Wink

at 275F wouldn't the alcohol evaporate when you put hte absinthe in?
i'm not really clear how hot 275F is, since i'm a celsius baby; but alcohol has a pretty low boiling point, doesn't it?
oh... but the sugar/water isn't boiling anymore...so the *water* isn't evaporating. does the sugar do the same thing to the alcohol that it does to the water?
oo! my chemistry skills fail me!

candy-makers reassure me: does the alcohol stay in, or not?

I know very little about chemistry but they do taste absinthey which I guess is the main thing. x
