My parents are constantly nagging me that I need to eat more protien, but I don't want to eat meat. Do you have any yummy recipies that have a lot of protien but are vegetarian friendy? Thanks  Grin

Try anything with peanut butter!  It has lots of protein the only thing you have to watch out for is the fat.  When I was complaining my hair was falling out more than usual I was told to eat more protein...so when I actually started eating my pbj everyday it stopped.

Many, many vegetarian recipes are higher in protein than meat dishes. Tofu for example is VERY high in soy protein. So are nuts, tempeh, seitan...if you go to the store, there is usually a vegetarian section-look for Boca, Morningstar Farms, Amy's-they're all vegetarian foods that are very tasty and quite high in protein! this vegetarian resource group page lists the protein content of a lot of vegan foods, by serving size and per 100 calories.

some protein winners (besides soy): quinoa, all beans and nuts, whole grains, spinach, broccoli...

Anything with black beans.  Black beans are also good for iron, so eat up! Here is one of my favorite, super easy black bean recipes (It feeds a ton of people so don't make it just for yourself)

*fry a finely chopped onion in oil until golden
*add a can of black beans, a can of stewed tomatoes and a can of corn
*warm mixture through and add some cumin, coriander, and chile pepper to taste.
*Add 1 -2 cans of water
*Stir well, add some hot sauce.  Cook for about 15 minutes
*if you have them, this soup is excellent topped with tortilla chips, salsa, avacado, sourcream etc. but it is fine without them

along the black bean band wagon, easiest black bean soup ever--

can o' beans
cup o' cooked salsa
boulion cubes+water
boil it all up, then puree half of it and there ya go!

My FAVORITE black bean recipe is for black bean burgers.  They are so so so good.  Even my meat-loving friends dug this recipe.  Don't skimp on the relish, really adds that refreshing zing.  Also, you don't need to grill the burgers.  I use my George or broiler to get these guys done.  Even frying them up in a pan will work.

Black Bean Burgers with Spicy Cucumber and Red Pepper Relish

Relish:
2/3 cup finely chopped peeled cucumber
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
1 tablespoon fresh lime juice
1 tablespoon honey
1 teaspoon finely chopped dill
1/8 teaspoon salt
Dash of ground red pepper

Burgers:
1 (15-ounce) can black beans, rinsed and drained
1/2 cup dry breadcrumbs
1/4 cup minced red onion
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/8 teaspoon black pepper
1 large egg
Cooking spray
1/4 cup light mayonnaise
4 (1 1/2-ounce) hamburger buns
Dill sprigs (optional)

To prepare relish, combine first 8 ingredients in a medium bowl. Cover and chill 2 hours.
To prepare burgers, place beans in a large bowl; partially mash with a fork. Stir in breadcrumbs and next 5 ingredients
(breadcrumbs through egg). Divide bean mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.

Prepare grill.

Place patties on grill rack coated with cooking spray; grill 5 minutes on each side or until thoroughly heated. Spread 1
tablespoon mayonnaise on the bottom half of each bun; top each with a patty, 1/4 cup relish, and top half of bun. Garnish
with dill sprigs, if desired.

Yield: 4 servings (serving size: 1 burger)
