I've been meaning to get around baking regularly, since I seem to have far too much time on my hands before school starts up again.

Friends have suggested cupcakes, but I've had a sort of frustrating time finding a variety of recipes. Most of them just seem to call for boxed cake mix with some variations.

Is there anything wrong with just taking a normal cake recipe and baking it for a shorter amout of time to account for the smaller size?

I think that's what I do LOL. Although I can't remember if the oven temp needs to be different. We need a cake expert!!

If you like lemony cakes - these amounts will make about 12:

85g butter, 85g caster sugar, zest of 1 lemon, 1 tablespoon lemon juice, 1 large egg, 140g self-raising flour and a pinch of salt. Make in the usual cakey way (the juice goes in at the end). Takes 12 mins in a 200 C oven. For icing mix some lemon juice into some icing sugar.

mm, cake  Kiss
