Hi everyone!

I'm a long-time lurker that just finally got around to registering.  I have two events coming up in the next two weeks and very little money for these events, so I thought I'd ask for suggestions from the ever-wise & crafty people here.

My mother's 60th birthday is coming up and we are having a cook-out for her.  I'm making a giant green salad to bring, but I need ideas for another tasty & cheap side dish to make.  It has to be able to feed a large number of people and be really inexpensive to prepare.  Any suggestions?

curry roasted potatoes!  
Cut potatoes into chunks, toss in a bowl with a mixture of 1 part curry powder
1 part garam masala powder
1 part salt
2 parts olive oil
(yes, that's pretty approximate.  I usually start with 1 part = 1 tablespoon, and add on if the potatoes aren't adequately covered).
Spread in single layer on baking sheets.  Turn after about 10 minutes at 375 degrees F, and roast/bake for another 10 minutes.  That'll vary widely depending upon the size of your chunks, so keep an eye on it.

I also love black bean & corn salads, and they're pretty cheap:
