Forevr Bee- Thats awesome that you are willing to try new things! My dad won't try anything that he knows has tofu in it.  Of course I have him taste stuff and omit the fact that there is tofu in it, but he doesn't need to know that Wink I have sooo been wanting to try seitan, I've never had it!  I have a recipe to make it from scratch, which is a lot cheaper than buying it.  I have a dream of making awesome General Tso's Seitan.  Would it work in a chicken recipe, or does it really taste a lot like sausage?

My dad's the same way with anything!!!The brand of Seitan I'd purchased from a local Heath Food store is called White Wave or something like that. But I think that other brands ( & Homemade too) have different tastes. I've however seen recipes invoving Seitan as a replacement for chicken & Pork.

This has only to do with Vegan and not the specific cookbook. But I thought I'd share this great recipe I made last night for the first time. These brownies were really moist and tasty. I'd totally make them again.

Blueberry Brownies
Add some fresh summer berries to an old favorite. What a delicious difference!

1 cup applesauce
1/2 cup sugar
1 teaspoon vanilla
1/2 cup whole wheat flour
1/4 cup unbleached white flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chopped walnuts (or pecans)
1/2 cup fresh or frozen blueberries
Cooking spray

Preheat oven to 350 degrees and spray an 8-inch square baking pan. In a medium mixing bowl, combine applesauce, sugar, and vanilla.
In another bowl, whisk together flours, cocoa, baking powder, soda, and salt. Make a well in the center and add wet ingredients; mix until just combined. Gently fold in walnuts and blueberries. Spread mixture into prepared pan and bake for 25 to 30 minutes, until center is firm and not sticky. Let cool completely before slicing.

Makes 16 brownies.
PER SERVING: 80 CAL (20% from fat), 2g PROT, 2g FAT, 15g CARB, 208mg SOD, 0mg CHOL, 1.4g FIBER

Thanks for the recipe! I love brownies...drool... . By the way, I made homemade seitan last weekend and it was really really easy, plus the ingredients to make a ton of seitan only cost about 2 dollars.  I used some of the seitan to make General Tso's Seitan, and OH MY GOD, it was delicious.  General Tso's is my all time favorite chicken dish so I was thrilled that I could replicate it.  Let me know if anyone wants the recipe.
