Anyone likes caribbean food??

Here is one for right now I will post the #1 belizean dinner, which would be Rice and beans. To accompany this they eat stew chicken and potato salad or  coselaw and a side of fried plaintain. And usually they drink a soft drink with it.


1/2 pound red kidney beans
2 cups rice
1 cup thick coconut milk
1 medium onion (sliced)
1/2 bell (green) pepper
1 clove garlic (optional)
2 bay leaves
salt to taste
ground black pepper to taste
1/2 teaspoon dried thyme
Cover beans in water, and soak overnight. Put beans in pot, add onions, bell pepper, garlic, and enough water to boil until beans are tender and whole. Add coconut milk, and seasonings. Add rice to beans, and cook over gentle heat until liquid is absorbed. Stir gently with a fork, and add a little water as necessary, until rice is cooked.
*Alternative is to use smoked turkey in the beans add this either when using a crock pot or when boiling the beans and omit the coconut milk. You can also cook the beans the same day but takes about 2 1/2hrs. to soften and cook and and all the ingredients except for rice. Add rice when it is almost done.


2 pounds potatoes (peel, dice and boil until tender, drain & cool)
1 can mix vegetables/or fresh vegies(boiled then cooled and chopped)
5 eggs (hard boiled), diced
3/4 cup mayonnaise or  salad dressing (more if needed)
mustard for flavor and color
salt & ground black pepper to taste
1/4 evaporated milk
season salt to garnish top of salad (gives a nice flavor)
Let potatoes and mix vegetables cool before handling. Place potatoes, mix vegetables, and eggs in a bowl, and toss. Season with salt and black pepper to taste ( remember you can always add more seasoning, so start with about 1/2 teaspoon salt and 1/4 teaspoon black pepper). Add 1 tablespoon mustard to 3/4 cup miracle whip salad dressing. Stir until mustard is mixed in with salad dressing, and add to potato mixture. Stir.

Stew chicken
2lbs Chicken (cleaned and chopped)
1/4 tsp thyme
1/2 tsp parsley
1 tbs paprika
1 med onion
1 clove garlic
1/2 c tomato sauce/paste (mix with water)
salt and black pepper (to taste)
1 bell pepper, chopped
1/4 tsp basil
2c water
1/2c oil

Place chicken in a clean bowl add all dry ingredients "rub down" the chicken until well seasoned. Place oil in a skillet, when it gets hot add the seasoned chicken and brown on both sides maybe 2-4 minutes on each side depending on what part of the chicken you are cooking. After browning add garlic, stir,  then onion, stir, and then bell pepper, stir.   When they all brown add the tomato sauce, stir and then add the water. You may need to add more salt and pepper. let simmer for 20 minutes or until cooked. Add water if necessary.

Fried Plantain (regular, belizean)
Serves: 4-10
2-6 ripe plantains, sliced slanted.
oil for frying or butter (just enough to cover the bottom well or a little more than that)
Heat oil in skillet. When hot enough place sliced plantains in the oil. Fry on both sides then place on a bed of napkins in a strainer or plate.
