i have an annual fiesta every year.. minus the pool. I've built up quite a supply of Mexican fiesta tableware and Mexican blankets that I use as tableclothes.  I string up pepper lights above the garage door and hang a donkey pinata with colorful string from the middle of them.. this is for decoration only and this is where we set up our bar. I use cactus shot glasses as votive candle holders. I find the most vibrant large silk flowers and put them into a royal blue glass vase..the color is what makes the look. I put sombreros on the table and fill the brims with tortilla chips for the dips. I play only fiesta music to keep the energy in the right place. I slice limes and lemons put them into my ice cube trays before the water and add these to the drinks. The most important thing is COLOR.. use it everywhere.. ask your guest to dress the theme, or just ask them to dress in  colors like orange, blue, purple, yellow, green and red. Your guests dressed in these colors will amazingly add to your decor. Keep the guests in the mood and the mood will carry the theme Wink   Enjoy!

I made tamales for a big fiesta i had for my boyfriend.. got some paper streamer things in red white and green for a dollar and a dollar store mexican flag. Then got a pinata as well and filled it with dollar store candy.. bucket-o-marghrehita and lots of beer and it was all good to go. I love cooking so the tamales and other food were the main event. Also some latin music is good too

~you could use lots of colorful streamers to decorate and hang decorative pool towels for the theme, and if any forgets a towel
~ make pillows out of a chili pepper print, shaped like peppers and set out on the tables
~make candles shaped like chilies or piniatas
~ dont forget the mexican style food like tamalia, quesadillas, and a taco bar (shells, meat, lettece, tomato, cheese, salsa, etc.)
~cut up scraps of colorful tissue or construction paper and spread around table for a cheap, fast table decoration
