Quinoa is so yummy and good for you, upon seeing this recipe, knew I had to try it. Did however make one change, to try something even more new. Instead of green stuffed peppers I used large vidalia onions.

Quinoa Stuffed Onions
Ingredients:
1 medium onion, finely chopped (actually used the onion from scooping out onions to be stuffed, 1 cup)
2 Tbs. olive oil
2 ribs celery, finely chopped
1 Tbs. ground cumin
2 cloves garlic, minced
1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
2 15-oz. cans diced tomatoes, drained, liquid reserved
1 15-oz. can black beans, rinsed and drained
cup quinoa
3 large carrots, grated (1 cups)
4 - 6 large onions, peeled and hollowed out

For a little kick I added Sriracha sauce, about 2 Tbs.

To hollow out the onions:
First slice off the top to create an opening. The cut off the bottom enough to make it flat but not all the way through. Then peel off the first layer. Now using a small spoon scoop out the inner most parts leaving about 2 - 3 outer layers. Then salt and pepper inside with a touch of olive oil.

Directions:
-Heat oil in saucepan over medium heat. Add onion and celery, and cook until soft. Add cumin and garlic, and saut 1 minute. Stir in spinach and drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated.

-Stir in black beans, quinoa, carrots, and 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes, or until quinoa is tender. Season with salt and pepper to taste.

-Preheat oven to 350F. Pour liquid from tomatoes in bottom of baking dish.
-Fill each onion with quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour. Uncover.

Bake 15 - 20 minutes more, or until tops of onions are browned and soft. You can also add cheese to the top at this time if you like.

Let stand 5 minutes. Transfer stuffed onions to serving plate, and pour pan juices on top before serving.

My family loved this for dinner, and it reheats well for leftovers. Bet it could also be frozen and reheated.

So that is my new recipe for the challenge. Smiley
