So yesterday I began my Adventures In Canning (tm).  On Saturday, I went and picked 3 pounds of blueberries and a bunch of black raspberries and the raspberries were my first victims in my adventures.

I used a combination of various recipes I found online, but basically:

4 c smushed black raspberries
2 c sugar
2 T pectin
1 lemon (juice and zest)


Various steps (excuse the fact that they're out of order):  From L-R, putting on lids, testing to see if its set, bottom: all of the ingredients beginning to cook.





When we were done, we had 11 little jam jars full of black raspberry jam.  I loved hearing the little pings as they vacuum sealed themselves!




And of course, the best part of canning is eating it!




It was so yummy and I'm totally hooked on canning!

I haven't decided what I'm going to make with the blueberries yet, but mmmm, are they good.

Thank you!!! Not to brag but ... IT IS!

Now, I just need to jump feet first into pickling.  


Do you have any recommendations for canning kits?  I bought a 'back to basics' five piece kit (funnel, jar lifter, lid getter-outer) but the jar lifter melted and the magnet on the lid fell off halfway through ... we were worried it got into one of the jams before we found it sticking to a lid in the pot of water!

Ha YES!  I had so much fun.  Luckily, my mom helped so I had someone who'd made jam before!

Ooo looks great! This is also the summer of first canning adventures for me - I did strawberry jam and maple strawberry "smooch" last weekend. I bought the Ball book of canning, so I have tons of great recipes!

As for equipment, I found the jar lifter at a tag sale, and have just been using wooden chopsticks to handle the lids. I need to rig up a better rack for boiling the jars though, or maybe I'll break down and buy an actual one.

And great idea for the tag sale.  I did splurge on a water bath canner pot because I need a huge pot anyway!

The smooch is just a sauce with pureed strawberries, maple syrup, apple juice, and pectin. I've been drizzling it on ice cream, and yogurt with granola, and it is delicious!
