Found this recipe and had to try it. Glad, cause it is YUM! Simple to make and a good way to take advantage of fresh vegetables.

Summer Vegetable Tian




You can never have too much cheese!  Grin


Ingredients
1 Tbsp olive oil
1 medium yellow onion
1 tsp minced garlic
1 medium zucchini
1 medium yellow squash
1 medium potato
1 medium tomato
1 tsp dried thyme
salt & pepper
shredded cheese

Instructions
Preheat the oven to 400 degrees. Finely dice the onion and mince the garlic. Saute both in a skillet with olive oil until softened (about five minutes). While the onion and garlic are sauteing, thinly slice the rest of the vegetables. Spray the inside of an 88 square or round baking dish with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, and thyme. Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown.

This would be good with fresh basil in place of the dried Thyme, too.  Smiley

you don't need any other liquid? I tried a vegetable tiam before but after almost an hour in the oven it still wasn't done. The potatoes were still a bit hard, just like the other veggies... had to get it out because the cheese started burning... They were sliced thin enough I think. Any guess at what could have gone wrong?

Nope, no other liquid. Did you have your oven temp up enough? When I cook potatoes this way they cook pretty much the same way except the temp is only 375. Here the recipe I use for that:

Yes I believe I had... but we have a microwave/oven type of thing so perhaps it doesn't get the temperature it's supposed to be... I'll try to set it on 230C instead of 200 next time! I saw that recipe too and pinned it Wink
