There is a great breakfast place a few blocks from our house that serves the best baked eggs! It's so good, in fact, that the wait is upwards of an hour on the weekends. I crave their yummy dishes but, aint nobody got time for that! I'm also currently OBSESSED with my veggie spiralizer. This dish is the result of both factors.



It takes less than 5 minutes to put together and doesn't require many ingredients. Oh, and it tastes good Smiley.



- eggs
- zucchini
- marinara sauce
- crumbly cheese (feta, goat... whatever)
- heavy cream
- salt & pepper
- green onions or chives (optional)

Preheat the oven to 375 degrees.

Grease up a ramekin and set aside.

Spiralize a zucchini (or you can just slice it) and make a little nest in your ramekin.



Crack in 2 eggs and add a couple of big spoonfuls of marinara sauce.



Add a splash of heavy cream and sprinkle with cheese. Hit it with some salt and pepper and pop it in the oven!



Bake for 15 minutes. If you don't like runny yolks, give it more like 20 minutes. If you want to be fancy, add some green onions or chives and enjoy (after it cools down Smiley!

What a great start to your morning!  I love runny eggs as well and frying them sometimes is unpredictable...I bet they are perfect baked like this!

Ooo yum! That sounds fabulous! I bet my baby would love it, too! She loves eggs, zucchini and cheese. We are doing speghetti sauce for the first time with her tomorrow, so we will are if she like marinera soon! Wink

It really is super easy! We even had it for dinner the other night with a green salad Smiley. Sometimes breakfast for dinner is fun!

I think it would also be good with salsa and cheddar or pepper jack cheese.

Yum, put some rice and beans in the bottom with some shredded bell peppers. Yummy!
