When I asked my family for suggestions for Christmas dinner years ago, they asked for Asian food - but cheap Chinese take away style. (don't ask me why....) This soup stuck around since everybody loves it and It's super easy to make. I actually just whipped up a 4 liter batch the other day. It can be made more spicy by using a different type of sambal. I used a very hot sambal bajak.

Ingredients for 2 liter

2 stock cubes, vegetable or chicken

1 onion, chopped

2 or 3 garlic cloves

1 kg tomatoes

6 tablespoons sugar

4 tablespoons sweet soy sauce (kecap manis)

2 tablespoons vinegar

1 teaspoon sambal ulek

1 teaspoon lemongrass powder

1 teaspoon ginger powder

2 tablespoons cornflour

 

Instructions

Boil 1 liter of water and add the stock cubes, garlic and onion. Add tomatoes and boil again.

Mix together all of the remaining ingredients except the cornflour and add. Stir in, then puree the soup using a blender. In a seperate bowl, mix the cornflour with one or two spoons of soup and add.

This is the basic recipe. You can now add bean sprouts, chicken, meat balls, shrimp, etc for variety. For a truly home made soup you can even make fresh chicken stock. I haven't tried that yet, but it will be good!
