I had a late night craving for buffalo chicken and decided to pull out one of my old recipes. I made it one winter when I didn't want to leave the house and it works here when nothing is open! I usually have all the ingredients in my pantry for the dough and I happen to have leftover chicken fingers that I needed to use. I always have buffalo sauce, FYI. Last time, I used chicken and banana peppers. This time, I used the chicken and threw in some olives and a few pieces of broccoli I had on hand. I'm wondering if a potato version would go well...

It is! I'm always surprised by how easy it is too. Of course, you could always use storebought dough which would make it even easier. I just never seem to have any on hand.

I'm going to try this. I make a ham & cheese version all the time, so it would be nice to mix it up a bit. Have you ever rolled it in Panko crumbs before baking? So crunchy-good! Smiley
