Got this recipe from the Bais Yaakov Cookbook, and it is a nice alternative potato side recipe. Plus it is yummy and easy. The whole cookbook is incredible so far.


Crispy Potato Roast
Ingredients:
6 tablespoons extra virgin olive oil, divided
Kosher salt
Freshly cracked black pepper
1/2 1 teaspoon red pepper flakes (optional)->but not for me
4 pounds yukon gold potatoes, left mine unpeeled
4 shallots, peeled (can use onion)
8 sprigs thyme (can use dried thyme)


Directions:
Preheat oven to 375 degrees. With a sharp knife or a mandolin, slice potatoes very thinly. Place about a tablespoon of olive oil on the bottom of a 9-inch oven-to-table dish and spread it out evenly. Sprinkle with salt and black pepper. Arrange your potato slices vertically on the dish (so the edges, not the flat sides, are up).  Thinly slice the shallots with a sharp knife or a mandolin. Place a slice of shallots between slices of potato. Brush the remaining 5 tablespoons oil. Generously season with salt and peppers, thyme and red pepper. Bake for 1 1/2 hours, uncovered. Cover with foil and bake another 30-35 minutes, until tops are crispy. Serve hot, and enjoy!

Yuummmmers! My Mom used to make something similar and I loved how the edges would get crisp but the middle stayed soft. I definitely want to try this recipe.
