Purim is this Sunday so it was time to make some Hamentashen (fruit-filled triangular cookies) for our friends.



There are many, many recipes out there for making these yummy cookies, but here is the one I used for these.
Hamentashen:
Dough
    cup shortening
    1 cup honey
    4 eggs
    4 cups flour
    1 tsp. baking powder
    1/2 tsp. salt
Sift all dry ingredients together. Make a well in center and put all other ingredients in. Mix by hand or with mixer till dough forms. Refrigerate for 30 minutes. Roll out dough to 1/8th inch and use a glass to cut out cookies.


Place cookies on parchment lined cookie sheets. Place tsp. of your favorite dried fruit or preserves. This time I used cherry and strawberry preserves. Pinch 3 corners.


Bake for 20 minutes in 350 degree oven. Cool and eat!

I saw this a little to late to make these for Purim this year.  Did you use regular vegetable shortening?  Do you thin you can you substitute margarine? I try to avoid shortening.
