I feel kind of stupid asking, as I mostly do cross stitch and every other needlepoint I have done has been part of a kit (commercial or put together by a friend).

My mom sent me some absolutely gorgeous canvasses, by Needle Crossings.  However they don't come with any recommendations of what to stitch them with...  Brands, even types of yarn or pearl cotton to stitch them with.  So obviously I have no color guide other than the colors on the canvasses. 
I don't have any decent needlework store locally.  Only a Joann's and michaels.   Angry
So I  don't even know where to start if I were to order online, since colors can be so different in photos. 

I love the pictures, and want to do the projects for the fair over the next couple of years.  I'm just bummed getting fiber to stitch with will obviously be obnoxious.  The Needle Crossings artist doesn't actually stitch, she only creates them, so she didn't have color recommendations.  The store they came from told me to look on their webpage, but it only lists brands of yarn.  So again, I'm kind of stuck with not having any in person to actually see colors...  Frick. 

I'm close to just beading them with the correct colors of beads on corresponding DMC floss strands.  I have those on hand!

They are gorgeous, and I really want to do the lobster brick doorstop in particular!  But holy crap, how do I get colors and what type of stitching stuff?

Those are so pretty. That lobster is so wonderful. Hmmmm....do you know of any other stores that sell it? Maybe contact them?

Actually the store my Mom visited does do online ordering. 
They don't have a huge webpage, but I think if you email them asking about the pattern they will do an online order somehow. 
She visited Grace Robinson in Freeport, ME.  Their webpage is :

Annnnd if you prefer a regular piece rather than the brick, they do have both a lobster and a crab on the tablecloth background...  Plus so many more neat things.  Also, I think NeedleCrossings has a retailer list too on their webpage.  If you get one, let me know which!  (And what type of yarn or thread or whatever you use.  I'm still trying to figure out if I can get away with pearl cotton or not since it's about the only thing I can get in town for needle point.)
