I had some bruised apples and some pie crust dough I needed to use up, so I decided to see if I could make hand pies.
I didn't have the proper ingredients for any recipes I found online, so I just made it up as I went along. I peeled two organic Gala apples and cut them into thin slices. To the apple slices I added about 1/4 teaspoon of cinnamon, 1 Tablespoon of sugar, a pinch of salt, and about 1/2 teaspoon of flour.
I used two 9" pie crusts and cut them in to rough circles. I added the filling and brushed the edges of the crust with egg white. Before sealing, I added a small slice of butter to each.
I folded them over and cut an X in the top to vent. I brushed the outside of the crust with egg white as well.
I had a few little apple pieces and pie crust remnants left, so I made them into apple pie bites. They are made exactly the same at the pies.
I baked them at 375 F for roughly 10 minutes. (My oven isn't very consistent, so definitely watch them if you decide to make some yourself!)
They turned out quite well, and were delicious right out of the oven. I was out of nutmeg, otherwise I probably would have added a sprinkle to the apple mix.
Recipe (Makes 4 hand pies, and a 4-6 pie bites)
2 9" pie crusts
2 apples of your choosing
1 TBSPN sugar
1/4 tspn cinnamon
1/2 tspn flour
1+ tspn cold butter
pinch of salt
1 egg white
Wash, peel, and slice apples. To apples add sugar, cinnamon, flour, and salt and mix until coated. From pie crusts, cut out four circles. Save crust scraps to make pie bites in whatever shape you'd like. Scoop apple mixture on to the pie crusts, leaving room for the crust to be folded and sealed. Add small piece of butter on top of the mixture of each pie. Brush egg white onto the edges of crust, fold over, and seal with a fork. Cut an X into the top of each pie and pie bite and brush with egg white. Bake in the oven at 375 F for roughly 10 minutes.
