For christmas, my sister gave me a book with Indian ayurveda recipes. Whilst I'm not really into the whole wyurveda thing, I LOVE Indian cuisine and it's entirely vegetarian as well. While studying, I always feel like snacking on something, and as studying can go on for quite some time I prefer something at least kind of healthy so I can eat it without feeling bad. And then I found this:



All the chocolatey, coconutty goodness without any refined sugar och flour or baking. All you need is a food processor (i used a stick blender, but its bowl was a bit too small really..) and maybe fourty minutes or so, including freezing time.

Vegan, raw, chocolate bars:
1 dl sunflower seeds
1 dl pumpkin seeds
4 tbsp cocoa powder
1 pinch of sea salt
1 tsp vanilla powder
2 tbsp crushed flax seeds
4+ tbsp cocnut flakes
20 dried apricots (original recipe called for dates..)
1-2 tbsp water
1 tsp sambal oelek
2+ tbsp dried cranberries (recipe called for gojiberries which is suuuper healthy)
1 dl almonds

Process the seeds until they are like a flour. Add the rest and process until crumbly. Add water until you get a slightly sticky texture. Push into an oven form or something similar, freeze for 30 min and indulge! Or just eat it straight away Wink Keep it in the fridge or freezer.

This recipe can be altered however much you like, depending on what you have on hand. I used apricots as I don't like dates (frankly, I don't like dried apricots eiher) but it doesn't leave much taste, just texture. And as long as you get the right texture and it's sticky enough to press it into shape you can use anything. If you make it a little stickier, it can probably be rolled into little balls of goodness Smiley

EDIT: Suggestions for substituting water: milk, coffee, kahlua (if you're naughty Wink ) or just about anything you think will work with chocolate!

I buy raw chocolate bars at my local bio shop and they are delicious but so expensive!

Thank you gals! I just thought it was a good recipe to share since it's so easy to adapt to your own taste!

I think using some really strong coffee (or something even stronger, like kahlua <3) instead of water would make them even more awesome Cheesy

Thanks for posting this, I have had these from health food stores before and although they're really yummy, they can be quite pricey.. and small.
I have been trying to think of some high protein snacks to take on days out, picnics, walks etc.. I think these would be a good idea. Wondering if I could incorporate some oatmeal in the mix?.. hmm.. will have to experiment. Thanks for the recipe! Smiley

kjlutz: yes, the "batter" is quite hard, so be careful! Wink But i think adding some liquid (water/milk/coffee/kahlua!) might make it easier to process.

chocolatebutton: I definitely think oats will work! It will be like a healthier version of these http://en.wikipedia.org/wiki/Chokladboll. Maybe substitute some of the sunflower/pumpkin seeds for oats? It might need more liquid though, otherwise they will probably not stick together. Good luck!

Whoaa more tasty chocolately inspiration.. thank you! I will have to remember them if I ever make a trip to Sweden. I was thinking to replace half of the seeds for oats and possibly use orange juice to loosen the mix. I have my porridge with orange juice rather than milk, so I just think that would work well, esp with the chocolate... mmm..
How long do these keep for?
