I've never been much of a baker.  I didn't really like doing it because I thought it took so dang long to make anything.  Enter "Cake Boss."  I kept watching it and I was like "I want to learn how to do that.  Also, I want cake."  Seeing as how there's only 2 of us in the house, I figured cupcakes would be better as I could take any left-overs into work.  Only thing is, I had never made cupcakes before in my life.  I'm 29.  I know.

So here is my first batch- peppermint chocolate made from a mix kit I got for Christmas.  Kind of rough.


My second batch from a mix I found for 84 cents.  Hot chocolate flavored cupcakes with fluffy marshmallow frosting.


Third batch was combined as regular cupcakes and mini cupcakes.  The cupcakes are banana chocolate (a twist using a mix and fresh bananas).  The orange ones had vanilla frosting tinted orange.


Part 2 of chocolate banana- mini cupcakes to look like Valentine candies.




Tomorrow is my boss's last day at work so I made mini banana cupcakes that look like petite fours.  I even made the batter from scratch!


I'm getting much better at making cupcakes!  If anyone wants the recipes for the banana chocolate or banana, let me know.

Wow. You have been busy with your kitchen experiments! Did you know that you can freeze unfrosted cupcakes, and then frost them when they thaw? Zippy bag time! They keep for several months. And you don't have to thaw them all together. Just pull out what you are needing. And use your frosting accordingly. Either storebought, or homemade. Just make up smaller batches of frosting if you are making from scratch. You obviously have already learned how easy the frosting is. And most frosting recipes half or quarter well, as in if it makes 12...well half would be 6...then fourth would make 3. Just for clarification...I am sure you can do math  Grin

This is a great post because you can really see the progression in  your baking skills from the first cupcake to the most recent. I bet they all tasted delicious.

Thanks everyone! It's good to know you can freeze cupcakes. The recipes I've been trying make a lot of cupcakes. The people at work love me, though.

Kittykill- sadly, the marshmallow frosting was from a mix so I'm not sure what was in it. Best way to describe it is a meringue with marshmallow fluff mixed in. It was super light and gooey and delicious.

Thank you!  My bf doesn't have much of a sweet tooth, but I've got him hooked on cupcakes now lol

FYI I bought some "Fluffy White" canned frosting in the baking aisle that tastes a lot like the fluffy marshmallow frosting.
